Principle of the Emulsifier
When an emulsifier is in operation, materials undergo mixing and reaction via heating and stirring in the water tank and oil tank, and are then drawn into the emulsifying tank by a vacuum pump. The central agitator at the upper part of the emulsifying tank and the PTFE scraper always conform to the shape of the mixing tank, wiping off all wall-adhered materials to continuously create new interfaces for the scraped materials. The materials are then sheared, compressed and folded by the blades, making them flow to the homogenizer after stirring and mixing. Subsequently, the materials experience shearing, impact, turbulent flow and other processes generated between the high-speed rotating cutting wheel and the fixed cutting sleeve, and are cut in the shear gap, being rapidly crushed into particles of 200μm-0.2μm. Since the emulsifying tank is under vacuum mode, air bubbles generated during the stirring of materials are extracted in a timely manner. The vacuum extraction method prevents air bubbles from being mixed into the products during stirring, thus ensuring the production of high-quality products with a glossy finish, fine texture and excellent ductility.
Principle of the Paste Making Machine
A paste making machine is usually equipped with one main tank plus two or three auxiliary tanks, and production is carried out by adding main materials into the main tank and auxiliary materials into the auxiliary tanks. The main tank of a paste making machine is usually a double-layer structure with a special high-gloss finish. The machine is fitted with an upper disperser that eliminates material blind spots, and the dispersion time can be arbitrarily set according to different products. It is equipped with a 220V, 0.75KW Shanghai-made motor with a rotation speed of 2900 rpm. The disperser is manufactured with modern German technology and features a unique structure. Materials move at a high speed in the gaps between multi-layer rotors and stators, forming intense hydraulic shearing to disperse the materials. At the same time, comprehensive interactive forces such as centrifugal extrusion, grinding and collision are generated, enabling the materials to be fully mixed, stirred and refined to meet the required standards.
The tank cover is equipped with an illuminated sight glass to monitor the dispersion status of products in the tank at any time, as well as a micro material inlet to facilitate the special flavoring addition process, ensuring easy operation. The machine adopts bottom discharge, and materials can be directly transferred to a filling machine for sub-packaging through pipelines; it also features tilting discharge for easy cleaning. In addition, the tank cover is fitted with latches to achieve a better vacuum sealing effect.
It can thus be seen that the working principles of the emulsifier and the paste making machine are similar. The difference is that the main function of an emulsifier is emulsification, while a paste making machine replaces emulsification with dispersion.
